Fruit cheesecake

I ground the biscuits, then melted the butter and poured over the ground biscuits and mixed very well. In a round shape (to be max 25cm) I placed the biscuit composition evenly. I put it in the preheated oven for a few minutes. I took it out and let it cool. In a bowl I put the sugar, cocoa, salt mixed evenly, then I added cream cheese and mixed with the mixer. Then I added an egg, mixing after each well. I melted the chocolate on a steam bath, left it to cool a bit, then I added it over the cheese composition. At the end add sour cream and whipped cream. The obtained composition is poured evenly over the biscuits and put in the oven until baked. Leave to cool until the 2nd day. We prepare the topping as follows: In a bowl we put the sugar and the fruits, and we mix the starch with water and we pour it over the fruits. Stir gently over high heat until the syrup thickens a little. Unwrap the ring from the baking tin, garnish with whipped cream and then the fruit and syrup.

Cheesecake with berries

1 cup macadamia or brazil nuts or walnuts
1/2 cup almonds
1/2 cup coconut flakes (or coconut kernel)
1 cup dates or 1/2 cup honey
2 teaspoons vanilla essence
a little salt

Cream ingredients

2 1/2 cups cashew nuts (soaked for a few hours in water and drained)
1 cup coconut butter
2 teaspoons lemon juice
2 teaspoons vanilla essence (recommended to use vanilla extract)
a little salt
3/4 cup honey
2 cups berries: blackberries, raspberries, blueberries

Method of preparation

1. To prepare the crust, put the nuts in the food processor until they crumble. Then add the rest of the ingredients and mix until you get a sticky composition. If you don't find it sticky enough, you can add more dates. Place the composition in a cake pan with a removable bottom, level with your fingers and place in the freezer.
2. To prepare the cream you need a food processor in which to mix all the ingredients
3. Pour the cream over the crust and put it back in the freezer for a few hours, and after it hardens it can be moved to the fridge until ready to serve.
4. You can decorate the cake with some berries or make a sauce from soaked dates, cocoa powder and fresh mint leaves mixed in a blender.

Fruit cheesecake

I couldn't get enough of a cheesecake in any combination, and the best I've ever eaten was the one from Starbucks (certainly NOT the healthiest, because in the conditions where no one can cheesecakes, muffins, tarts and cakes that they have here in Romania, I don't want to think about where they are brought from (let's go over).

So then, cheesecake recipes there are many, although I noticed a mistake that occurs frequently in most recipes: cream cheese is replaced with plain cow's cheese and that's not really ok, especially since cow's cheese has a different consistency, it's somewhat in shape for Bulgarians, while for cheesecake we have to use a cream cheese, it's not Philadelphia mustard because some people told me that the cake is too expensive. So, for this recipe I chose to use another cream cheese, much more accessible, which he found for 4 lei in the Plus store and has 300 gr (I think).

For the countertop:
& # 8211 300 gr graham crackers
& # 8211 200 gr of melted butter
& # 8211 2 tablespoons cocoa

For the cream:
& # 8211 900 grams of cream cheese
& # 8211 2 sachets of gelatin
& # 8211 200 ml of liquid cream
& # 8211 60 gr of sugar
& # 8211 Vanilla sugar or vanilla essence
& # 8211 3 tablespoons lemon juice

For topping:
& # 8211 Fresh fruit or compote
& # 8211 jelly

Although the ingredients are many, the recipe itself is simple: grind the biscuits with a food processor, mix the melted butter with cocoa, pour the butter over the biscuits, even out and place the top in a cake pan with removable walls, about 28 cm in diameter. We uniform and let it cool for an hour.

For the cream, soak the gelatin in 50 ml of cold water and let it swell. Meanwhile, mix the cream cheese with the sugar, lemon juice and vanilla essence. Melt the gelatin over low heat and put it over the cream (be careful, the gelatin should NOT boil). The gelatin is followed by whipped cream. We have a homogeneous cream that we pour over the counter.

Over the cream we put the fruits, cut into pieces, according to everyone's imagination. Pour an envelope of jelly over the fruit, prepared according to the instructions on the package.

A very simple recipe, but an exceptional cake, which in our case made a very good impression on the guests, because it is fresh and light, and the fresh fruit gives it a very fine aroma.

Fruit cheesecake & # 8211 a simple dessert that impresses everyone

If you are going to have a party and you want to surprise all the guests with a special dessert, I recommend you to prepare a fruit cheesecake. It is so tasty that no one is left indifferent. You can find the recipe in the rows below. It's not complicated at all.

Dough ingredients:

  • 500 gr wheat flour, 3 tablespoons sugar
  • 250 gr butter, 3 yolks
  • 2 tablespoons baking powder, 3 tablespoons cocoa

Ingredients for the filling:

  • 1 kg of cottage cheese
  • 100 gr soft butter, 3 yolks
  • 6 egg whites, 1 sachet of vanilla pudding
  • 100 gr sugar, 600 gr fruit (cherries, raspberries)

Method of preparation:

First we prepare the dough. Combine wheat flour with sugar, cocoa and baking powder in a bowl. Add the butter cut with a knife and mix, then add the yolks and knead the dough quickly. Put the dough aside and prepare the cheese filling.

Beat the soft butter with the sugar and yolks. Then add the cottage cheese, gradually, and at the end, add the pudding powder.Beat the egg whites until you get a firm foam.Add the egg white foam to the cheese mixture. At the end, add the fruit and mix gently.

We lined a large tray with baking paper. Grate about 3/4 of the dough on a coarse grater.Put the grated dough on the bottom of the tray. On top add the cheese filling with fruit. We grate the rest of the dough on top.Put the tray in the preheated oven at 180 degrees and bake the cheesecake for about 50-60 minutes. After it is baked, take it out of the oven and let it cool completely.

We then cut it into slices and serve it with our loved ones. Good appetite and increase cooking!
