RECIPE PREPARATION Meatball soup:

We clean and wash the onions, chop two of them and mix them with the carrot given on the large grater together with the celery and sauté the vegetables in oil. Meanwhile, knead the meat that we will mix with the remaining and chopped onion, add the egg and the rice and 2 -3 tablespoons of oil and even one of water if you feel that the composition is not malleable enough. From this we form balls the size of a walnut.

After the vegetables have hardened, cover them with water, boil them for about 20 minutes, add the meatballs, taking care to place them on the surface of the whole pot so that they do not overlap. .In the last minutes of cooking, add the borscht to the sachet, salt and pepper. After taking the pot off the heat, add the finely chopped parsley.

1. Wash the bones and boil them in salted water. Gather the foam that forms and, after half an hour of cooking, remove the bones from the juice. Wash and finely chop the onion, carrot and pepper and add over the bone broth.

2. While the vegetables are boiling, prepare the meatballs as follows: boil the rice for 4-5 minutes, drain the water, mix in a bowl with the minced meat and beaten egg. Sprinkle with a pinch of salt and mix well. Put the stove on low heat and, with a teaspoon, take from the composition meat from which meatballs are made. Put them in the pot and let them boil for 20-30 minutes.

3. Separately boil the borscht, pour it into the pot, season with salt and add the soup in a few boils. Turn off the heat and add the finely chopped greens.

I didn't even notice that I didn't post this recipe. Meatball soup it's one of my favorites and I don't really eat soups. Recipe it can be adapted according to preferences, ie soup it can be white with sour cream, red with broth.

How do we prepare meatball soup?

Put the vegetables on the large grater and cook in a little oil. Add about 3 liters of water and let it boil.

Mix the meat with the egg and rice (do not wash it to "adhere" better), salt and pepper.

They do meatballs the size of a walnut and carefully put in hot juice (make a small fire when you put them and after you're done with them you can increase it).

Bring to the boil, add the tomatoes, peppers (I put them frozen) and a little salt.

After 1 hour try the meatballs, if they are cooked add the cabbage juice or borscht, let it boil for a while and then turn off the heat.

Separately mix the yolks with the cream and add little by little the hot juice.

Pour the mixture back into the soup.

If you want, add to the meatball soup and 1 bunch of chopped parsley (I put it on each plate when I eat) and a chopped hot pepper.

We like sour soups with borscht and flavored with a lot of fresh larch. You can also sour soup with vinegar, or lemon juice, as is the custom of your family, and you can use green parsley instead of larch.

The meatball soup goes wonderfully with a little cream, either directly in the pot or in the plate, when serving.


Meatball soup with goulash

In our family, soup or broth is eaten quite often. I think that's how I was taught at home, when I came from school to eat a good plate of soup and we'll see the second way or later :). There are some soups that I repeat because they are successful, so to speak, and the meatball soup with goulash is one of them. The recipe is very simple and is very similar to the classic meatball soup.

  • 500g minced pork (you can use turkey meat or chicken breast)
  • 1 or
  • 2 tablespoons rice (round grain)
  • 1 large or 2-3 smaller balls
  • 1 small carrot
  • 1 small parsley root
  • 200ml sour cream 25% fat
  • 2 yolks
  • juice from half a lemon or even better 200ml borscht
  • 2-3 threads
  • 1 healthy dill bunch
  • salt pepper

1. Peel a squash, grate it and squeeze the juice. Put a pot with about 4 liters of water to boil, add the vegetables and let it boil covered with a lid.

2. Mix the meat with the egg, rice, a little salt, pepper and 1 tablespoon chopped dill.

We form with our wet hands hairs the size of a walnut that we put in the water when it boils.

Let it boil for about 40 minutes (they should be almost boiled) and add the cleaned and given gulia through the large grater. Add the chopped larch and cook for another 10-15 minutes.

3. Turn off the heat and set the pot aside. In a larger bowl, rub the yolks with the cream and gradually add the hot juice (from the pot :)), about 1-2 polishes. Pour the mixture into the pot and mix gently. Add lemon juice and chopped dill.

If necessary, add more salt.

Serve hot with hot peppers.

Trying to respect this, we offer a recipe that is suitable for your baby, if he is over 10 months, but also for the whole family, if you add salt separately in portions.

Ingredients Meatball soup

3 carrots (about 400 gr)
1 gulie (approx. 100 gr)
1 parsley root (about 150 gr)

8 pork ribs (or pork bones)
1 tablespoon salt
1 tablespoon vegeta de casa

2 tomatoes
1 lemon (or lemon salt or borscht)

Meatball mixture

700 gr of minced meat twice
1 medium onion
120 gr long grain rice
1 teaspoon salt
1 teaspoon pepper
1 tablespoon flour
10 parsley threads
2 eggs

Preparation Meatball soup

  1. All the vegetables are cleaned and put on the large grater. Put to harden in oil in a large pot.
  2. When it softens a little, put the ribs (or bones) on top and cover with water (about 3.5 l of water). Add salt and vegeta.
  3. Finely chop the peppers and tomatoes from the knife and add them to the soup. Boil everything with a lid for about 45 minutes. Check the ribs to be cooked after the 45 minutes and let them boil a little more if necessary.
    * if you use bones, the soup will be tastier, but the cooking time is longer, about 1 hour 30 minutes, even 2 hours and then the soup must be foamed often.
  4. While the soup is boiling, make the meatballs taking into account the following:
    - minced meat it's good to be without much fat.
    - the meat is passed through the car twice of meat, must be very fine.
    - rice which you use to be perfectly dry you can put it directly from the bag or if you are used to washing it, place it in a strainer in a warm place and let it dry perfectly. It is one of the secrets so that the meatballs do not spread in the pot.
  5. The onion is also given through the meat machine or put it on the small grater. Finely chop the parsley.
  6. In a bowl, mix all the ingredients for the meatballs and knead well.
  7. Like always wet hands, we form nuts the size of a walnut.
  8. When the ribs are boiled in the soup, we can put the meatballs, one by one, in the soup, taking care to place them on the whole surface of the pot, do not crowd them in one place. Cook over medium heat for about 10 minutes. Boiled meatballs will rise to the surface. While the meatballs are boiling, froth the soup.
  9. After 10 minutes, turn off the heat, put the lid on the pot and let the soup cool. When it has cooled, straighten it with lemon juice (or lemon salt or borscht) to taste (I put all the juice from 1 lemon).
  10. Serve the meatball soup with sour cream and sprinkled with chopped parsley.

Homogenize the composition well and set aside for about 5 minutes. With a wet hand we form round balls, which we leave aside until the vegetables are almost cooked.

When the vegetables are almost cooked, add the meatballs. Let it boil for a few more minutes, until the meat and rice are cooked. Then add the tomato paste and the borscht that I boiled beforehand. If necessary, add more salt to taste. Turn off the heat and add the parsley on top. Optionally, meatball soup can be served with sour cream and hot peppers. Enjoy your meal!
