cups Original Bisquick™ mix
tablespoons chopped fresh chives

In medium bowl, mix Bisquick mix and cornmeal. In measuring cup, mix eggs and milk. Stir milk mixture into Bisquick mixture to combine; fold in 2 tablespoons chives.
Heat 10-inch or larger nonstick skillet or griddle over medium heat (325°F). Brush lightly with oil. Spoon rounds of about 3 tablespoons batter onto skillet to make mini pancakes. Once bubbles begin to form on surface of batter and edges begin to dry, turn and continue to cook until golden brown. Transfer to plate. Repeat with remaining batter.
Set oven control to broil.
Place cooked pancakes on parchment-lined cookie sheet. Spoon marinara sauce onto each pancake; sprinkle with cheese, pepperoni and the 1 tablespoon chives. Broil with tops 4 to 5 inches from heat 1 to 3 minutes or until cheese is melted, golden in spots, and bubbly. Serve immediately.

Having the same kind of food repeatedly while being confined at home has turned out to be monotonous and boring for many of us. So it does not really come as a surprise that people have taken to tweaking dishes innovatively or trying new recipes to lift their moods.
A while ago, we saw people making pancake cereals or mini pancakes and having them with milk or melted butter. And now, a food enthusiast made salty cereals in the shape of mini pizzas or what she called pizza cereals.

Pre-made pizza dough
San marzano tomato sauce
* Roll out the pizza dough and cut little circles with a cookie cutter or a knife.
* Put the pizza dough circles on a baking sheer and top it with tomato sauce, cheese, and pepperoni.
* Bake the circles for eight minutes in an oven preheated at 200 degrees Celsius or 400 degrees Fahrenheit. Your pizza cereals are ready.
“I think the fascination with the cereal trend has to do with the tiny versions of food being cute and small…Everyone loves pizza so I decided to make pizza cereal,” Mussi told Insider in an interview.

I knew this mini apple pancakes recipe was a hit when the entire batch disappeared within three minutes of my children walking in the door.
Yesterday was the first day of fall, and although I&rsquom not ready for the cold to set in, there are plenty of things I am looking forward to. I love having my windows open, and football season arrived. Plus, apples are everywhere! I have a huge basket of them right now, so I&rsquom cooking and baking with them as much as possible.
An apple puff pancake is one of my kids&rsquo favorite dinners. They love everything about it, and I generally do, too. This time, I wanted to try something different, however. I love mini foods, and I figured that if I could make these mini apple pancakes ahead of time, it would provide a great breakfast option for my kids. And yes, I can even freeze them so they can enjoy them later.
I tested these both as a standard recipe and dairy free, and these mini apple pancakes transition to dairy free perfectly. Simply switch out the butter for coconut oil and the milk for rice or coconut milk in the same quantities. My daughter loves them!
They&rsquore quick to make, and I easily made 24 mini apple pancakes with this recipe. Ignore the fact that my kids came home and devoured almost the entire batch. They eat less for breakfast than they do when they come home from cross country practice starving.
Plus, mini food is cute. Witness my mini donuts. I can&rsquot decide if I prefer the flavor of my lemon mini donuts or the traditional mini donuts best, but I will admit that the traditional sprinkle covered donuts have the looks category covered!
How to Make Mini Apple Pancakes
I tried this in greased and ungreased pans, nonstick and regular muffin tins. I found that ungreased nonstick muffin tins work best, surprisingly enough. Prep your muffin tins by putting a tiny pat of butter inside each cavity.
Preheat your oven to 375. While the oven is preheating, quickly chop your apples (with the skins on) into bite size pieces. Make sure you use a firm apple that will hold up to being baked. Granny Smith&rsquos will always be my favorite! Add them to a bowl with the brown sugar and cinnamon, and toss to coat.
Use a spoon to add apples to each muffin cavity with the butter, then place this in the oven that is still preheating while you prep the batter.
In the same bowl you used for the apples, add eggs and whisk for 5 minutes until light and fluffy. This really helps the pancakes puff out. Add milk and whisk again to combine. Add flour and whisk just until incorporated.
Remove the muffin tins from the now preheated oven. Add batter to each cavity, filling it just about half way. I find it easiest to pour the batter into a liquid measuring cup and disperse it that way. I have much more control and don&rsquot overfill.
Place the filled muffin tins in the oven and bake for 15-17 minutes, until the pancakes are puffed and starting to turn golden brown. Remove from the oven, and immediately remove from the muffin tins. The longer you let them sit, the more likely the are to stick to the pans. I used a thin plastic spatula to scoot around the edge of each mini apple pancake before scooping it out.
Serve immediately or store in a sealed container in the fridge for up to two days.
Mini top-your-own pizzas
Put the flour in a large bowl. Add a little salt to one side of the bowl and the yeast to the other side. Sprinkle over the sugar, together with a spoon, and add the oil and 190ml warm water. Combine with a spoon until all the flour comes away from the sides of the bowl, then tip onto a floured surface. Knead for 5-10 mins or until smooth and elastic. Lightly oil a clean bowl, add the dough, cover with cling film and leave to rise for 1 hr.
Meanwhile, make the sauce. Pour the passata into a saucepan, add the basil and mixed herbs, then season and bring to the boil over a low heat. Simmer gently for 5 mins, then set aside to cool. Chop the toppings.
Once the dough has risen, tip it out, knock out the air and divide into 6 equal parts. Heat oven to 240C/220C fan/gas 9 and place 2 large baking sheets in the oven.
Roll out the dough on a lightly floured surface into a circle around 15cm in diameter. Pick up the circle of dough and toss about a metre up, spinning it in the air. Catch it on the back of your hand, so your fingers don’t poke through the dough. Do this at least 3 times to achieve a thin central base and a thicker outside crust. Alternatively, you could carry on rolling, but it’s not as much fun!
Lay the bases onto baking parchment (2 bases on 1 piece of parchment) and carefully slide each pair inside a plastic bag ‘tent’ for 15 mins to prove again.
After the second rise, spread the sauce over the bases and add the and mozzarella. Take the baking sheets out the oven and quickly slide the pizzas (still on their baking parchment) on top. You can cook 2-3 pizzas per tray. Return to the oven and bake for 12 mins. Take out, slice and eat.
