Speculoos are typical Belgian butter and cinnamon biscuits. These cookies are usually prepared on St. Nicholas' day and cut out with molds depicting characters in traditional clothing. Before my husband bought a box of these speculoos by mistake I did not even know of the existence of these cookies, but once tasted ... I tried to reproduce the recipe at home by looking a bit on the box to see the ingredients and it was love immediately. Speculoos have a particular crunchiness due to the presence of cane sugar and a wonderful scent due to the presence of ginger and cinnamon. My husband and I brushed an entire pan of cookies in one evening, and from today they have become his favorite cookies;) This is my recipe, if you try it, let me know what you think;)
How to make speculoos biscuits
In a bowl, arrange the brown sugar and the butter in chunks.
Work the mixture until you get a cream.
Now add the flour.
Then mix together the baking soda, cinnamon and grated ginger and milk and continue to knead with your fingertips.
Form the dough into a ball and put it to rest in the fridge for 1 hour.
Take back the dough, roll it out on a floured pastry board with a thickness of 3mm and cut out some rectangle-shaped biscuits.
Place the speculoos on a baking sheet covered with parchment paper, separating them from each other.
Bake the speculoos biscuits and bake them at 180 ° C in a preheated oven for about 8-10 minutes.
Allow the biscuits to cool before lifting them from the pan and serving.
