Method

How to make pear and gorgonzola risotto

Chop the onion and sauté it in a saucepan with the butter

Add the rice and toast it, then blend with the white wine and add salt

Cover with the boiling broth and continue cooking, adding the boiling broth as it is absorbed

Peel and cut the pears into cubes and cut the gorgonzola into small pieces

A few minutes before the end of cooking, add the pears and gorgonzola to the risotto

When cooked, turn off the heat and add a knob of butter and parmesan
