Banana pancakes are gluten-free, fat-free and super quick to prepare. When one of the girls who works with me suggested this recipe, I hardly believed that with a banana and two eggs I could have made light breakfast pancakes without the slightest effort, and instead, I was pleasantly surprised with the result. My favorites are still the egg-free pancakes but these are a great alternative, try my recipe and you will agree with me. How to make banana pancakes
Peel the banata, cut it into pieces and put it in a bowl.
Mash the banana with the tines of a fork until you get a puree
Add the eggs and incorporate them well into the mixture.
Finally add lemon and a pinch of baking soda and mix.
Heat a non-stick pan on the stove, pour a drop of oil in it and spread it all over the pan with a paper towel.
Pour a ladle of mixture and cook it over low heat.
When it is well congealed, turn it very gently with a spatula and cook the second side too.
As they are ready, stack the banana pancakes on a saucer.
Sprinkle your pancakes with a little maple syrup, garnish with some whipped cream and banana slices and serve.
