Vegetarian Curry Recipe of of 25-09-2018 [Updated on 30-09-2018]
The vegetarian curry, in this version prepared with pumpkin and chickpeas and accompanied by basmati rice, it is a single spicy dish, easy to make and very delicious. It is an Indian-inspired dish also revisited in an autumnal key. I love curry and spicy dishes in general, and since pumpkin is in season I let myself be tempted by trying this recipe which turns out to be vegan, vegetarian and also gluten-free and then the combination with chickpeas I found to be really perfect.

How to make vegetarian curry
Clean the pumpkin, then cut it into cubes. Slice the onion into icing.
Heat a drizzle of oil in a saucepan, add a clove of peeled garlic and brown it, then add the onion and sauté it in the pan by adding a couple of tablespoons of boiling broth.
Now add the turmeric, paprika and curry and mix.
Now add the pumpkin, brown it for a couple of minutes in a pan, then add a ladle of broth and cook for about 15 minutes.
Now add the boiled chickpeas, stir and cook until the liquid has been absorbed. Season with salt and pepper.
Serve your vegetable curry by adding chopped parsley and accompanying it with basmati rice.
