Pork saltimbocca with dried tomatoes

Before leaving for Malta I emptied the fridge using everything that was half open and one of the recipes I made to consume a few things were these pork saltimbocca with speck and dried tomatoes, an easy and light second course, I accompanied them with the same tomatoes I stuffed them with, really tasty;) I returned home, clouded sky, submerged by emails and messages to answer and a suitcase of clothes to wash, luckily I have the weekend available to put everything back in sixth before starting again with the fast pace of my daily working life. Now I publish the post and I still take 10 minutes to relax, I'm still in bed waiting for Ivano to bring me the second coffee; P I greet you and wish you a good day, best wishes to Monica for the birth of her little girl, to patty for her birthday and good luck to sammy for her bad period and to danielina for her german holidays.

Method

How to make pork saltimbocca

Beat the slices of pork loin making them very thin

Stuff the center of the half of the slices with smoked cheese, speck and a piece of dried tomato

Close with another slice and secure everything with wooden sticks

Cook the meat saltimbocca in a hot pan with a drizzle of oil

After a couple of minutes, stir, add salt, pepper and blend with a little Marsala

Serve the meat hot with dried tomatoes as a side dish
