The recipe of the Magic Cake Cocoa it had been sitting on my desk for quite some time but, just like the white version, I was always quite reluctant to do it. However, given the success both on the Facebook group and here on the site for the other recipe, in the end I strengthened myself and decided to also try the chocolaty version ... And well I did, because I must admit that this recipe too new surprised me positively!
As in the other case, here too the procedure to make is quite simple, but it must be followed meticulously if you want to obtain the 3 layers: a base of chocolate pudding, an interlude of chocolate cream and a thin topping of soft sponge cake with chocolate on top!

How to make the magic cocoa cake
Separate the yolks from the whites and whip the latter until stiff after adding the cream of tartar.
Separately, whip the egg yolks with the sugar for at least 10 minutes: the mixture must be white and fluffy.
Always whisking, slowly add the vanilla first, then the salt and the melted but warmed butter, then the sifted flour and cocoa.
Finally add the milk too.
Finally, gently incorporate, with a movement from the bottom up, also the egg whites previously whipped.
The result will be a rather liquid dough.
Gently pour the mixture into a baking tray lined with parchment paper and bake in a preheated static oven at 150 ° C for about 80 minutes, or until the surface is golden brown.
Let the cake cool completely, then cover it with cling film and put it in the fridge for at least 2 hours.
Finally cut the magic cake into cubes, sprinkle with icing sugar and serve.
