Pasta alla Norma is a typical Sicilian recipe, originally from the city of Catania, it is a delicious pasta with aubergines with the addition of fresh tomato, salted ricotta and basil.
The name "Pasta alla Norma"it is said to derive from an exclamation made by a well-known playwright from Catania who after tasting this dish said:" It's a Norma! "comparing it to Bellini's work.

How to make pasta alla norma
Check the aubergines, cut them into thin slices.
Fry the aubergines in a large pan with the extra virgin olive oil, then lift them up and set aside.
In the same pan, brown the garlic, add the tomatoes, season with salt and cook for about ten minutes.
Meanwhile, cook the pasta in plenty of salted water, drain the penne and pour them into the sauce obtained. Add the aubergines, the ricotta salata cut into flakes and add the basil.
Sauté the pasta in the pan for a minute.
Serve the pasta alla norma on the plates by adding a sprinkling of salted ricotta and garnishing with fresh basil.
