The Mango sticky rice is a Thai dessert, (yes girls another Thai recipe) prepared with a rice pudding, pieces of ripe mango and coconut sauce, a vegan recipe a bit distant from the desserts we are used to here in Italy but really delicious.
This morning I wanted to step back in time and enjoy the mango sticky rice that I hadn't eaten for a while now.
If you are in Thailand, or you are close to this trip, you must absolutely taste this recipe, but if you cannot reach this place then prepare it at home, it will only take 4 ingredients. How to make Mango sticky rice
Choose a glutinous rice and leave it in a bowl with water for at least 1 hour.
Once drained, cook it on a steamer, with a lid, for 15 minutes after boiling.
Put the coconut milk and sugar in a saucepan and bring to a boil.
Once the rice is ready, transfer it to a large bowl.
Immediately pour over 3/4 of freshly cooked coconut milk and mix.
So let it rest for 10 minutes, the time for the rice to absorb the milk.
Now prepare the mango by cutting it right under the central stone.
Divide the pulp into many cubes without removing it from its peel.
Serve your mango sticky rice by pouring the remaining heated coconut milk over the rice and serve.
