THE marinated artichokes they are a fresh and tasty side dish, perfect for the first spring warmth. The procedure is simple and also quite quick, the only annoying part is that relating to cleaning and cutting the artichokes, but if you wear gloves with a little patience you will do everything in no time at all, after which you will not just have to season well and let it rest for an hour before enjoying your fantastic marinated artichokes!
How to make marinated artichokes
First clean the artichokes by removing the outer leaves, stems, leaf tips and inner beard.
Cut into fairly thin slices and leave to rest for 5-10 minutes in a bowl with cold water acidulated with lemon juice.
In the meantime, prepare the marinade: add the sliced garlic, chopped parsley, salt, pepper, oil to taste and vinegar in a bowl.
At this point, drain the artichokes, remove the lemon and arrange the artichokes on a plate, in layers, sprinkling each layer with the marinade before adding the next one.
The marinated artichokes are ready: let them rest for at least 1 hour at room temperature (or in the fridge, if it's very hot) before serving or keep them in the fridge for up to 4-5 days in a tightly closed container.
