The champagne sorbet it is an idea to serve during the New Year's Eve dinner, perfect for breaking up the end of courses before moving on to dessert. To prepare this sorbet you can use the ice cream maker or take care to break the ice crystals every 30 minutes during the freezing phase. You can also use both champagne and very Italian sparkling wine, you choose according to your taste whether to use the brut or the sweet one.
Certainly at home you will be invaded by bottles of sparkling wine, so what better time than this to make out a few and bring to the table something delicious and original like this sorbet?

How to make champagne sorbet

Put the sugar in a saucepan with water, bring to a boil and cook for about 5 minutes, until the sugar has dissolved and a syrup is obtained.
Remove the saucepan from the heat and let it cool. Then add the juice of half a lemon and the sparkling wine and mix.

Pour the mixture into a low-sided container, then place it in the freezer for two hours. Every 30 minutes, break the ice crystals with the tines of a fork so that the sorbet remains soft and homogeneous.Serve your champagne sorbet in martini glasses decorating its surface with cranberries or sixths of lemon.
