The Galletto al tamarindo is the recipe I prepared using the Galletto Vallespluga. The preparation incorporates oriental smells and flavors, thanks to the combination of mushrooms, peppers but above all the tamarind sauce. I won't tell you what it took to find this exotic fruit, but in the meantime I was stunned that I wanted to make the sauce myself, so I had to struggle a little to find it but it was worth it.
The meat of the Galletto was tender and tasty and the recipe was promoted by my parents who were the official tasters for the occasion.

How to make tamarind cockerel
Peel the tamarind and remove all the bones.
Put it in a saucepan with sugar, lemon juice, garlic and salt.
Add the water and mix the ingredients by mixing them.
Transfer the saucepan to the heat and, bringing to a boil, let everything thicken.
Then discard the Galletto, cut it into pieces on a cutting board and put it in a bowl.
Cover it with the prepared tamarind sauce, mix and close with cling film.
Refrigerate for 2 hours.
Thoroughly clean the mushrooms and pepper.
Then cut both into chunks.
Take the Galletto back and brown it in a pan with a drizzle of oil.
Lower the heat and add the vegetables.
Once you have mixed everything, cover and cook for 20 minutes.
Finally, season with salt.
Your Galletto al tamarindo is ready to be brought to the table.
