Recipe Croissants with shrimp and aubergines by of 12-05-2017 [Updated on 12-02-2018]
Hello, today I give you the recipe to prepare some savory croissants with puff pastry, stuffed with shrimp and aubergines. I tasted this combination in a restaurant in Castellabate, the chef proposed a bundle baked in foil with eggplant, shrimp and mozzarella which was then baked in the oven to create a delicious harmony of flavors.
I thought it best to steal his idea but to put this filling in the puff pastry, thus obtaining croissants with shrimp and eggplant to serve, for an aperitif or as an appetizer, during a seafood dinner.
How to make croissants with shrimp and eggplant
Clean and cut the aubergine into cubes.
Transfer it to a pan with hot oil and cook it, turning it from time to time.
Then lift it from the oil.
Meanwhile, clean the prawns following the guide here.
Now divide them into two parts, cut the smoked cheese into cubes and chop some basil.
Open the puff pastry roll and cut it into 8 equal parts.
Stuff each wedge with a little eggplant, shrimp, smoked cheese and basil, placing everything in the widest part of the triangle.
Roll the dough, always starting from this side and reaching the extreme tip, trying to give it the shape of a croissant.
Transfer all the croissants to a baking tray lined with oven-baked meat and brush them with a little milk.
Now cook them at 200 ° C for about 20 minutes.
Your croissants with shrimp and aubergines are ready to be enjoyed.
