Trofie recipe with zucchini and mussels of 03-03-2008 [Updated on 28-08-2018]
The pasta with mussels and courgettes is really super, I used fresh trofie and mussels that my father caught, a mouth-watering first course came out.
In the summer I prefer to cook seafood dishes and luckily in my house, they are always very popular, so we can all eat one dish together.
Have a good start of the week everyone and sorry for the discontinuity with which I insert the recipes, but lately I really don't have time to cook :(
How to make Trofie with zucchini and mussels
Wash and brush the mussels under water.
Put the mussels in a large enough pan, cover them with a lid and cook them over medium heat until they are all open.
Once opened, shell the mussels and set aside their sauce, filtered of impurities
Wash the courgettes, trim them and cut them into cubes, then brown them in a pan with a clove of garlic and the olive oil.
Now add the mussels together with their sauce, season with salt, pepper and a pinch of saffron and continue cooking for about 5 minutes over low heat to reduce everything.
In the meantime, cook the trofie and once drained al dente, pour them directly into the pan with the sauce.
Sauté the zucchini and mussels trofie in a pan.
Serve on plates with a sprinkling of pepper.
