This potato salad with tzatziki is one of my favorite salads. Potatoes seasoned with tzatziki, a yogurt sauce typical of Greece, become an ideal dish to be served both as a single dish and as a side dish. The potato salad with tzatziki is a fresh and light dish, which these days is really ideal to bring to the table :)
How to make potato salad with tzatziki
Boil the potatoes in plenty of salted water.
In the meantime, grate the cucumbers (I made a grated part, and the other into small pieces), washed but not peeled. Sprinkle the cucumbers with salt and leave them in a colander to drain for at least an hour.
Peel and chop the garlic.
Then combine the pieces of cucumber, with the minced garlic, the mint leaves (also chopped), salt, pepper and a tablespoon of oil.
Now add the yogurt in spoonfuls, until you get a creamy but thick mixture.
Leave the tzatziki to rest in the fridge for at least an hour so that the various flavors blend well.
Peel the potatoes, cut them into cubes and let them cool.
Combine the potatoes with the tzatziki and let it rest in the refrigerator for at least an hour before serving.
Serve the potato salad with tzatziki with cucumber slices and a sprig of mint.
