On Saturday at mom's home it is customary to eat legumes, last Saturday it was the turn of the chickpeas prepared in two variants, I prepared pasta and chickpeas for half the family and this chickpea soup for the other half;) chickpeas can be served both hot and cold, the important thing is that it is accompanied by croutons. How to Make Chickpea Soup
Procedure for preparing the chickpea soup
Soak the chickpeas for 12 hours with a teaspoon of baking soda.
Drain and boil them in abundant salted water for 2 hours.
Cut the spring onions into rings and fry them in a saucepan with a drizzle of oil and a chilli pepper.Add the chickpeas, add salt and cook for about twenty minutes.
When cooked, add the chopped rosemary to the chickpeas.
Serve the chickpea soup with croutons
