The carrot cake roll, or the carrot roll, is my recipe today. If you like desserts with a delicate flavor then this is for you! From a carrot and cinnamon-based dough and a delicious filling of cream cheese and sugar, a tasty roll is born that will finish in a very short time. I don't know about you, but carrot cake literally drives me crazy and in roll format I found it even tastier given the presence of much more filling, yum!
How to make the carrot cake roll
In a bowl, combine the flour, cinnamon and baking powder.
Separately, whip the egg yolks with the sugar.
Then add the oil, the mix of flour, yeast, cinnamon and finely grated carrots and mix.
After whipping the egg whites, gently incorporate them with a spatula.
Transfer the mixture to a baking sheet lined with parchment paper and level the surface.
Bake in a preheated static oven at 170 ° C for 10-12 minutes.
Once out of the oven, immediately turn the biscuit dough upside down on a surface covered with parchment paper, carefully remove the one used in cooking and roll up the biscuit dough.
Meanwhile, prepare the cream by whipping cheese and sugar.
Gradually add the cold melted butter and continue to work until you get a smooth cream.
When the biscuit dough is cold, unroll it and spread the cream.
Roll up again and refrigerate for at least 30 minutes.
Decorate with some sugar carrots or icing sugar and your carrot cake roll is ready to be served.
