Herb scones are a quick and easy to prepare finger food.
Elena Gnamgnam and I made these herb scones in our latest culinary jam session.
We brought the herb scones to the table along with the Philadelphia pizzas and the mimosa cocktail.
How to make herbal muffins
In a large bowl, place the flour, the butter into chunks, the sugar, and the still lukewarm water with the yeast dissolved inside.Start to work the focaccia dough by adding the salt and sparkling water at room temperature and work until you have a smooth and homogeneous dough.
Let the focaccia dough rise for about 2 hours, or until it has doubled in volume.
On a floured pastry board, roll out the dough to a thickness of 3 mm and with a cup make lots of scones.Prepare an emulsion with herbs, oil and coarse salt.Arrange the scones on a baking sheet covered with parchment paper, then tap their surface with your fingertips.
Now brush with the previously prepared emulsion and bake the herb scones in a preheated oven at 180 ° C. Cook for about ten minutes or until the scones are golden.
Remove the herb scones from the oven, arrange them on a serving plate and serve them with an aperitif or accompanied with a cheese and cold cuts platter.
