The nougat of the dead with coffee is my variant of this year to make a typical Neapolitan dessert that is prepared for the day of the dead. It is a very rich dessert, chocolate, hazelnut and hazelnut cream and a coffee paste that you can make at home or buy in pastry shops, the preparation is a bit elaborate but the result is exceptional, so it's worth the worth trying to make it at home.
In Naples, since the first days of October, all the pastry shops have in their windows the nougat of the dead and in a thousand flavors and variations, from the classic one with hazelnuts, to the pistachio one to the more innovative ones such as oreo nougat or kinder cereals. example. Method

How to make coffee nougat

Chop 250 g of dark chocolate, put it in a glass bowl and melt in a double boiler or microwave
Once melted, brush the inside of the toprone mold with chocolate, then refrigerate for 10 minutes, then resume the operation by spreading the chocolate evenly over the entire surface of the mold. Place in the fridge and let it rest for 10 minutes.


Now chop the white chocolate, put it in a glass bowl and melt in the microwave or in a bain-marie


Toast the hazelnuts in a pan

Put the instant coffee and sugar in a bowl, add the boiling water and mix until creamy.

Then add the Nutella and mix
Then add the melted white chocolate and finally the toasted hazelnuts. Mix until you get a homogeneous mixture.

Pour everything into the nougat mold. Now melt the remaining dark chocolate in a bain-marie and pour it on the cream so as to cover the base of the mold.

Place nougat of the dead with coffee in the refrigerator and let it harden well for at least 6 hours. Now clean the edges all around with a knife so that the air can pass between the mold and the chocolate and create a vacuum necessary to remove the nougat from the mold. Then just turn the mold upside down on a cutting board to remove the coffee nougat of the dead.


Then cut into slices and serve.
