Meat medallions with mushrooms

Recipe Medallions of meat with mushrooms of of 18-09-2013 [Updated on 06-03-2017]

After the success of the meat sandwiches a few weeks ago, I prepared an easy, quick and tasty second course of meat with the same mixture of the meat medallions stuffed with mushrooms and scamorza. I cooked the meat in a pan with a little oil, I put the lid on and the meat was cooked well inside and above all, it remained pretty soft, if you prefer you can also opt for cooking in the oven, I think 20 minutes at 180 ° should be enough, if you try let me know. That's all for today, I greet you and go in search of some concentration to be able to tick as many points as possible on the huge to-do list that increases every day more and more and that are crushing me even if I were an ant ... good day my friends: *

Method

How to make meat medallions with mushrooms

In a bowl, arrange the minced meat with the eggs, the Parmesan, the marjoram, salt and pepper

Mix everything until it forms a homogeneous mixture

Spread the meat on a surface covered with parchment paper until it forms a not too thin sheet

With a pasta cutter cut circles of meat

In each circle, create a hollow with slightly raised edges and put the medallions in the fridge for half an hour

In the meantime, clean the mushrooms, cut them into slices and cook them in a pan with a drizzle of oil and a clove of garlic, then cut the smoked cheese into slices.

Put the mushrooms in the hollow you made in the meat circles

Cook the meat in a pan with a little oil, covering the pot with a lid.

After 15 minutes, add the scamorza cheese, turn off the heat and leave it with a lid for another 5 minutes or until the scamorza has melted.

Serve the meat medallions with mushrooms and smoked cheese
