Cantucci thermomix

Most often served with vin santo in which they are soaked, cantucci are typical Tuscan almond biscuits. Also known as "Prato biscuits", cantucci are consumed and appreciated practically all over Italy. If you also like cantucci so much but you have never made them at home, here is the recipe to be able to make them yourself with the Thermomix.

How to make cantucci with the thermomix

Put sugar and lemon peel in the jug and pulverizzateli for 30 sec., Vel. Turbo.
Add flour, yeast and salt and work for 30 sec., Vel. 5.
Also add vanilla and eggs and mix for 1 min., Vel. 4.
Finally add the almonds and work for 1 min., Vel. Ear.

Divide the dough in half and form 2 cylinders of about 3 fingers in diameter and place them on a baking sheet lined with baking paper, well spaced from each other, as they will widen during cooking
Bake for about 25 minutes in a preheated convection oven at 180 ° C.
Then take the loaves out of the oven and, while they are still hot, cut them delicately into large slices about 1 cm diagonally, to give them the typical shape of the cantucci, placing them gradually again on the baking sheet covered with baking paper, with the cut side facing up.
Cook the cantucci again for about 15 minutes at 100 ° C.
Let them cool before serving, perhaps accompanied by vin santo.
