How to make lemon cream with the thermomix
Chop the lemon peel with the sugar for 20 sec., Vel. Turbo.
Add the egg yolks and whip for 40 sec., Speed. 5.
Then add the starch and milk and cook for 5-6 min. at 80 °, speed 4.
Finally add the filtered lemon juice and cook for 1 min., 80 °, speed. 4.
Let it cool before serving.
