Tzatziki (τζατζίκι) is a Greek appetizer based on yogurt, cucumber and garlic, certainly one of the best known and most appreciated recipes of Hellenic cuisine. Thanks to its fresh flavor and its versatility, tzatziki is used to accompany many dishes, from fish to meat to salads, it is also one of the fundamental ingredients of the famous Pita Gyros, it is so widespread that in practice it is impossible to go to Greece and not taste it, even if by mistake;) I love this sauce and in the summer I prepare it very often, after various tastings on the spot, this is the alchemy that I was able to find.The recipe is very simple, you just have to be careful to prepare it a a little earlier, as the longer you leave the tzatziki in the fridge before serving, the more flavor it will acquire;)
How to make tzatziki
Wash, trim and peel the cucumber.
Grate the cucumber and put it in a colander, add a little salt and let it rest for 30 minutes, until it has lost its vegetation water.
Put the grated cucumber in a bowl together with the minced garlic and mint.
Then add the yogurt, salt and oil.
Mix the tzatziki by mixing all the ingredients evenly.
Decorate the tzatziki with slices of cucumber or a little mint and let it rest in the fridge for at least an hour before serving.
