Pumpkin risotto is a classic autumn first course that is very simple to make and that everyone knows, nevertheless this morning I am posting my version with the addition of asiago, Elisa's favorite risotto that after having enjoyed its version for children she tasted even ours and from the nod he made with his head, I think he liked it a lot;)

Method

How to make pumpkin risotto

Clean the pumpkin by removing the seeds and filaments

Remove the peel and cut into cubes

Peel the onion, cut it into an icing and sauté it together with the butter in a thick-bottomed saucepan

Add the pieces of pumpkin, mix and cook for a few minutes then add the rice and toast it together with the sauce

Stir, then add a ladle of broth and continue cooking, gradually adding the boiling broth

When cooked, turn off the heat and add diced asiago and parmesan

Stir, let it rest for a few minutes, then serve the pumpkin risotto on plates
