The mimosa cake is usually prepared for Women's Day, March 8, and owes its name to the sponge cake with which it is made, and which crumbled on the surface resembles mimosa flowers. The recipe that I propose is that of my mother, every year she prepares the mimosa cake to celebrate all the women in the family, but this year I decided to change it and prepare it myself, I had to promise her not to put pineapple though, because my house doesn't like it very much;)
How to make the Mimosa Cake
Prepare the sponge cake
Separate the yolks from the whites and whip these ultmi until stiff. Whip the 6 egg yolks with 6 tablespoons of boiling water
Then add the sugar, whipping everything at maximum speed until the mixture is frothy.
Slowly add the flour and the sachet of yeast
Finally add the whipped egg whites, stirring gently with a spoon so as not to dismantle the mixture.
Pour the mixture into a greased and floured mold and bake at 180 ° C in a preheated static oven for 40 minutes.
Remove from the oven and let cool
Prepare the cream now
Cut a vanilla pod and simmer it in milk for 5 minutes so that it releases all its aroma
Mix the egg yolks with the sugar
Then add the flour until you get a homogeneous mixture. Finally, add the milk slowly, stir, put in a saucepan and cook the cream until it thickens.
Let the cream cool, then transfer it to a bowl and add the previously whipped cream
Let's go now to assemble the cake
Cut the top of the sponge cake horizontally.
With a digger, empty the sponge cake of its crumb as if to form a container. The removed crumb should be set aside to decorate the cake.
Prepare a dip by dissolving a few teaspoons of sugar in a little hot water and then adding the limoncello
Wet the sponge cake then fill it with the Chantilly cream, keeping 1/4 of it aside to cover the top.
Close the cake with the cap that you had removed at the beginning of the preparation wet with a little syrup.
Cover the whole cake with the cream that you had set aside
Decorate the entire surface of the mimosa cake by adhering the sponge cake crumb.
Place the mimosa cake in the refrigerator for at least 1 hour before serving.
