Ricotta and beetroot gnocchi recipe of 10-07-2014 [Updated on 05-02-2016]

The ricotta and beetroot gnocchi intrigued me for their bright red color and for the simple but effective preparation. Once I tasted these beetroot gnocchi I was enchanted, they have a delicate and particular flavor, perfect for my tastes. Friends my holidays are proceeding smoothly, crystal clear sea, white beach, sun and lots of relaxation, for the series ... Leave me here;)

Method

How to make ricotta and beetroot gnocchi

Put the beetroot with the ricotta in a mixer

Blend until creamy

Put the flour and Parmesan in a bowl, make a hole in the center and pour the ricotta and beetroot cream, then add salt and nutmeg

Start kneading by gradually absorbing all the flour

Form a loaf, wrap in plastic wrap and leave to rest in the fridge for 15 minutes

Take back the dough and on a cutting board sprinkled with flour form some dough strings

Cut into small pieces thus obtaining your gnocchi

Cook the ricotta and beetroot gnocchi in a large pot full of boiling salted water and drain as soon as they come to the surface.

Meanwhile, melt the butter in a pan with a clove of garlic and marjoram
Pour the gnocchi into the pan with the sauce, add the parmesan, sauté a couple of minutes

Then serve your gnocchi
