Avocado and lime plumcake

That of avocado and lime plumcake was the recipe with secret ingredient that I proposed this week on Instagram: given that there was no type of dye, I challenged you again to guess which was the green ingredient I used for my dessert. After the most classic pistachios, I have heard of all kinds, from zucchini to broccoli, until finally someone guessed, winning a misyan kit ;-)
But let's get to the recipe: I had never tried to insert theavocado in a dessert, but I got a soft and buttery plumcake at the right point, with a delicate and enveloping taste at the same time. Maybe not suitable for everyone, but definitely worth trying ... So for me it was definitely a success!

Method

How to make avocado and lime plumcake

First clean the avocado, extract the pulp and blend it with 2 tablespoons of lime juice.

Then work the soft butter with the sugar, then add the eggs, then also mix in the avocado and vanilla.

Also add sifted flour and baking powder and mix.

Mix the mixture in a mold lined with parchment paper and cook for about 45 minutes in a preheated convection oven at 170 °.
Remove from the oven and let cool.

In the meantime, prepare the icing: put the icing sugar in a bowl and start adding the lime juice a little at a time, mixing, until you get a fairly thick icing.

Then pour the icing on the surface of the cake.

The avocado and lime plumcake is ready: garnish with lime peel and serve.
