As the name already suggests, tradition has it that they are prepared for the period of Lent because they are low-fat biscuits.
Neapolitan Lenten are usually prepared on Ash Wednesday, the day before the beginning of Lent. For the Catholic religion, in fact, in this period, abstinence from meat and animal fats is prescribed, so in many Italian regions it is traditional to prepare sweets without animal fats but tasty, hence their name. As they say: "made the law, found the deception": P
How to do Lenten
This year I tried to make these almond cookies and this is my recipe.
In a bowl put flour, sugar, almonds, egg and salt and mix.
Then add diced ca ndito cedar, yeast, vanilla, cinnamon and nutmeg and go back to kneading.
Make two loaves of the mixture, then place them on a baking sheet lined with parchment paper and brush them with egg.
Cook at 200 ° C for 20 minutes.
When the loaves have cooled, cut them to form biscuits.
Bake them again at 170 ° C for 15 minutes.
Once cooled, your Lenten days are ready to be enjoyed.
