There Vegan white sauce it is a valid alternative to the classic béchamel: to prepare this recipe just replace the cow's milk with a vegetable one, such as soy, use the oil instead of the butter and that's it.
By flavoring your vegan béchamel with salt and nutmeg you will get an excellent product that you can use not only if you have vegan guests for dinner, but also to make a lighter and more digestible condiment in complex preparations such as lasagna or baked pastries.

How to make vegan bechamel
Put the flour and extra virgin olive oil in a thick-bottomed saucepan.
Stir with a wooden spoon
Pour in the soy milk and mix until a homogeneous mixture is obtained
Keep stirring until everything comes to a boil.
Then add the salt and grated nutmeg to the béchamel
Lower the heat and stir again until the béchamel is of the desired density
