The carrot flan it is a colorful dish that I have chosen to prepare in small single-portion cocottine. To prepare it you practically need ingredients that are hardly missing at home, carrots, eggs, parmesan and with the addition of a little nutmeg which serves to give that extra touch of flavor.

How to make carrot flan
Peel the carrots and potatoes, cut them into cubes and cook for 5 minutes in the microwave. Alternatively, boil them in a saucepan with boiling water for about 10 minutes.
Now transfer the vegetables to a blender together with the melted butter, Parmesan, salt, nutmeg and 2 egg yolks, keeping the egg whites aside.
Blend until creamy. Then pour the mixture into a glass bowl.
Now whip the egg whites and add them to the mixture.
Gently mix with a wooden spoon.
Transfer everything to the buttered and floured cocottine.
Bake in the oven at 180 ° C for 20 minutes.
Your carrot flan is ready to serve.
