How long does it take to prepare an excellent pesto? Just 10 minutes if you use the Thermomix! Preparing pesto alla genovese is in fact very easy and does not take much time at all. Once the basil leaves have been carefully washed and dried, they will be inserted into the jug with the other ingredients and finally a little extra virgin olive oil and a pinch of salt will be added. Once you have your sauce, you can use it on pasta or bread, the choice is yours.
How to make Genoese pesto
Wash the basil leaves and dry it on a tea towel leaf by leaf
Put the parmesan, pecorino, pine nuts, garlic and basil in the jug: 30 sec at turbo speed
Collect the mince with the spatula, then pour in the oil and add the salt then set 20 sec at speed 4 and 20 sec at speed 8
Then use the Genoese pesto to season pasta or to put it on bruschetta
