The spinach spatzle are a typical dish of Trentino cuisine, they are small dumplings that are prepared with a mixture of spinach, eggs, flour and water. The mixture is passed into a sort of potato masher and "dipped" directly into a pot with boiling water, then seasoned with a condiment of your choice, usually with speck. Method

How to make Spatzle with spinach

Steam the spinach

Then drain them, chop them and put them in a bowl with the eggs, water, salt and pepper

Blend the mixture then gradually add the flour.

Put the batter in the fridge to rest for 30 minutes

Meanwhile, prepare the dressing
Heat the butter in a pan with the speck and cut it into strips for a few minutes

Then add the cream, salt and pepper.

Gradually pour the spinach compost into a pot with boiling salted water, using a potato masher with large holes

When the dumplings rise to the surface, drain them with a slotted spoon.

Gradually pour the dumplings into the pan with the sauce

Sauté them in the pan adding some grated Parmesan

Serve the spinach spatzle
