The roast pork with plums is a simple but original second course, I hadn't tried the combination of meat and prunes yet and I was pleasantly surprised again this time. For the next days of celebration, if you want to bring to the table a different roast than usual this recipe could be for you, marsala and plums will give it softness and taste;)
Today we enjoy another day at home, for us who are always in the office and live beaten days, the best relaxation is to wake up late in the morning, be together curled up on the sofa, nibble, watch TV and play, especially now that there we are set in our new home. How to make roast with plums
Put the pitted plums and marsala in a bowl and marinate for 1 hour
Using a knife or a sharpener create a hole in the center of the loin, along its entire length.
Then proceed to fill the hole with the marinated plums. Set aside the Marsala and the remaining plums to finally deglaze the cooking liquid from the roast.
Season the roast with salt and pepper and gently massage the meat.
Heat a clove of garlic and a sprig of rosemary in a pot that can also go in the oven. Add the roast and brown it evenly on each side
Add the hot broth and place in the oven at 180 ° and cook for about 40 minutes
Then put the roast back on the stove and add the marsala and the remaining plums
Let the sauce reduce on the heat, and in the meantime untie the roast.
Cut the roast into slices and place it on a serving dish, sprinkle it with the plum sauce and serve
