How to make jam tarts
In a large bowl, work the flour, sugar, egg, butter into pieces and lemon peel.
Once you have a compact dough, wrap it in cling film and let it rest for half an hour in the fridge.
After this time, resume the dough and roll it out on a lightly floured surface.
Using the stencil, cut some discs a little larger than the latter.
Then butter the molds and line them with the shortcrust pastry to pierce the base.
Put the jam inside the molds.
With the leftover dough, form strips that you will cross to form the tarts.
Bake in a preheated static oven at 180 ° C for about 20 minutes.
Let it cool completely and remove the tarts from the molds.
