Mother-in-law's escalopes recipe of 02-09-2009 [Updated on 29-08-2018]
This morning I want to delight you with an easy easy recipe to prepare excellent scallops. I tasted these escalopes with carrot cream at my mother-in-law's house and I liked them very much so I wrote down the recipe and last night I prepared them for the hubby. My mother-in-law got this recipe from my husband's paternal grandmother, hence the name of the recipe that is handed down from mother-in-law to daughter-in-law apparently;)
How to make the mother-in-law's escalopes
Peel the potato and carrot and peel the onion.
Cut the vegetables into pieces and cook them in salted water for about half an hour.
Once cooked, blend the vegetables with the white wine and a little cooking water, and season with salt and pepper.
In a non-stick pan, froth the butter, then brown the previously floured escalopes.
Brown the escalopes on both sides, add salt and put them aside on a plate.
In the same pan now add the vegetable puree and then the scallops.
Allow the escalopes to flavor for a couple of minutes, turning them from time to time in the carrot cream.
Then arrange the mother-in-law's escalopes on the plates and serve them with their cream.
