Struffoli with chocolate are a less traditional version of the typical Neapolitan struffoli that has recently begun to spread in the pastry shops of my city. How to make chocolate struffoli
Put the flour and sugar in a bowl, make a hole in the center and pour in the eggs, oil, rum and vanilla.
Start kneading starting from the center and gradually absorbing all the liquids.
Continue to work until you get a smooth and homogeneous dough.
Take some pieces from the dough and make long and fairly thin cords.
Cut the cords into small pieces (remember that they will swell during cooking).
Heat some seed oil in a saucepan and start frying the struffoli (do not add too many or an annoying foam will form).
As they are ready, place the struffoli on kitchen paper and then put them all in a bowl.
Add the honey and mix gently to mix.
Then transfer the struffoli to a serving dish and give it the shape you prefer: usually cone or donut.
While the struffoli settle, melt the dark chocolate and mix the cream.
Add the chocolate on the struffoli.
Decorate with sprinkles, sugared almonds and candied fruit and serve.
