Cod croquettes are a very tasty way to eat this fish. The recipe comes directly from Lisbon, where I wanted to taste the pastéis de bacalhau, the typical finger food, with extreme distrust (I always refuse to eat cod) and which instead won me over. Already at the first bite I was amazed, the croquettes were amazing and the flavor of the cod was not felt so strongly. The contrast with the sheep's cheese also fits perfectly. I admit, that day I had the concrete demonstration that in life you must always taste, even when we are sure that we do not like an ingredient!
How to make codfish croquettes
Boil the potatoes, peel them and mash them.
Chop the cod and put it in a bowl with the potatoes, one egg, salt, pepper and parsley.
Now add the breadcrumbs and start kneading again.
Once the cheese has been cut into chunks, place it in the center of some dough.
Form the croquettes, pass them in the beaten egg and then in the breadcrumbs.
When the oil in a saucepan is hot, fry a couple of croquettes at a time.
As you lift them, transfer them to absorbent paper.
Your codfish croquettes are ready to be enjoyed.
