Recipe Tagliatelle porcini and ham from of 26-01-2011 [Updated on 22-09-2016]
This morning I give you the recipe for a nice first course with porcini mushrooms. As many of you know, I am a mushroom lover and I am always looking for different ways to prepare them. Last Sunday, at my mother's house, the choice for the first course fell on these fragrant ones tagliatelle with porcini mushrooms and raw ham, a mouth-watering first course.
For the success of the dish it is good to use a sweet raw ham such as that of Parma or San Daniele, if you find fresh porcini you will have a dish that you can serve to the king;)

How to make porcini and ham tagliatelle
Clean the porcini mushrooms, clean them with a damp cloth, then cut them into slices
Brown a clove of garlic in a large pan then add the mushrooms.
Add salt and pepper and continue cooking over moderate heat for about 20 minutes.Now add the raw ham cut into strips, and the chopped parsley, mix and turn off the heat
Cook the tagliatelle in abundant salted water, drain when al dente and pour into the pan with the sauce.
Add the smoked provola cut into julienne strips and sauté everything for a couple of minutes over high heat.
Then serve the tagliatelle with porcini mushrooms adding pepper and freshly chopped parsley
