The bunch of grapes on bread it's a great idea for a fall centerpiece or to bring some really adorable mini buns to the table. As a concept, in short, it is somewhat reminiscent of the Danube, but with a much simpler dough and obviously a different shape. You can customize this recipe by changing the type of dough, for example using one with walnuts or olives, or the filling: I'm sure your bunch of bread will always be delicious!
How to make the grape bunch of bread
First of all, prepare the dough for the bread: Put the flour in a bowl, add the yeast and sugar and start kneading with the water.
Then add salt and oil and knead until you get a smooth and homogeneous dough.
Let it rise for about 2 hours or until it has doubled in volume, then pick up the dough, deflate it with your hands and start taking many balls of dough, all of the same size, then roll them out with your hands creating small discs.
Put a little ham and cheese in the center of each disk, then close the dough around the filling creating a ball.
As they are ready, start placing the stuffed balls on a baking tray lined with parchment paper.
Arrange the balls as if they were the berries of a bunch of grapes, also creating a piece of stalk on top, to make it clearer that it is a bunch, and brush it with egg white.
Bake the bunch of bread in a preheated convection oven at 180 ° C for 35-40 minutes, then let it cool down at least before serving.
