Ricotta cake is a soft cake with a delicate flavor. This recipe is from a mother of a pupil of my mother and at home we love it, so it has become part of our family cookbook. How to make ricotta cake
Beat the egg whites until stiff.
In a bowl, form a frothy mixture by whipping the egg yolks, sugar and softened butter.
Add the ricotta and mix gently.
Once everything is well blended, add the sifted flour, baking powder and milk.
Incorporate the egg whites and mix everything gently.
Pour the ricotta cake mixture into a 26 cm buttered pan sprinkled with sugar.
Bake at 175 ° C in a preheated static oven for 40 minutes.
Once cooled, sprinkle the ricotta cake with icing sugar and serve.
