Recipe Cream of broccoli and octopus of of 28-10-2016 [Updated on 20-02-2018]
Starting from the broccoli cream, I made a halloween-style dish by adding ricotta to the cream and putting it all in small glasses. To give the monstrous touch we thought an octopus placed with the tentacles in the air as if to look like a hand that comes out to scare us;)
I admit that this year, unlike previous years, I really enjoyed making these themed recipes, of course the desserts are the ones that have delighted me the most, but this cream with broccoli and octopus is not bad at all for the occasion don't you think?
How to make broccoli and octopus cream
Sweat the onion in the oil over low heat.
After washing and removing the broccoli stems, divide them into florets and brown them in oil.
Dice the potatoes, add them to the pot and wait a couple of minutes before adding the hot broth.
Cook for about 30 minutes, stirring occasionally.
Puree the vegetables with an immersion blender.
Add salt and parmesan.
Once you have put the ricotta, mix carefully.
Meanwhile, prepare the baby octopus by starting to brown a clove of garlic in a pan.
Brown them and blend with the wine.
Fill 3/4 of each cup with the broccoli cream.
On top of the small glasses lay the baby octopus upside down, with the tentacles raised upwards.
Your broccoli and octopus cream is ready.
