The calamari salad is one of the summer recipes I love the most, fresh, light and colorful, the calamari salad is an appetizer that often accompanies my dinners during this period. I love fish-based dishes and they are ideal to prepare in summer to stay light while eating with taste, it is certain that I have to fight a little with my husband to make him appreciate these recipes, but then he gives in, especially in this period in I need to have a diet that is as healthy and varied as possible, and once the dish is brought to the table, appreciates and even makes an encore;)

Method

How to make squid salad

Let's start by preparing a marinade by placing the chopped parsley, chopped garlic, salt, pepper, lemon juice and oil in a small bowl.

Clean the squid starting to peel the bags

Eliminate the part with the eyes, remove the entrails, the gladius and rinse under running water.

Cook the squid in boiling water for about 15 minutes.

Drain and set aside to cool

Cut the squid into rings

Clean and wash the vegetables. On a large baking dish, arrange a bed of rocket, then the carrots cut into julienne strips and finally the corn

Now place the squid cut into rods, the celery cut into small pieces and season with the marinade prepared previously.

Mix everything, then place the calamari salad in the fridge for at least half an hour before putting on plates and serving.
