The Fagottini of crepes with salmon and mozzarella they are a cold appetizer, quick to prepare and super appreciated by my family. The combination of smoked salmon and New Year's Eve is undoubtedly one of the most successful, so what better occasion than these crepes to bring something appetizing and delicious to the table? you can prepare the crepes in advance, maybe make a few more, and then indulge yourself with the fillings you like best. Anyway I find that the salmon and mozzarella pairing worked just fine;)
How to make crepes rolls with salmon and mozzarella
Prepare the crepes batter.
Break the eggs into a bowl and beat them with the salt with the tines of a fork. In a larger bowl put the flour, make a hole in the center and pour the milk then mix until you get a smooth and fluid batter. Now add the egg mixture and mix until you have a homogeneous mixture. Cover the bowl with plastic wrap, then let the batter rest for 30 minutes.
Grease a pan with a little oil, when it is hot pour a ladle of batter and tilt the pan to distribute it well on the surface. Cook the crepes on both sides until they are lightly browned.
Place one crepes at a time on a surface and on half of the crepe lay the slices of smoked salmon and the slices of mozzarella. Fold in half, then roll up into a bundle. Close the crepes bundles by securing them with a thread of chives or kitchen twine.
Serve the rolls of salmon crepes standing up, decorating with chopped fresh parsley.
