Lupine burger recipe from of 08-11-2016 [Updated on 07-02-2018]

Lupine burgers have been a notable discovery of recent times. Always looking for new ways to decrease animal protein in my and my family's diets, I have found that lupins have a better protein / carbohydrate ratio than all other legumes.
Said and done, I immediately proceeded to insert the lupins among the most popular weekly ingredients both in the form of home made burgers and bought in slices like a common sliced meat;) lupine burger with a nice salad close by, you will have a complete, light, nutritious ... and really tasty meal! The breading is made with corn flour and chia seeds, delicious and gluten free so as to satisfy not only vegan friends but also celiac friends. I'm still in Milan and I have a lot to do, so I'll leave you with the recipe of the day and I'll go and follow some speeches. A kiss :*

Method

How to make lupine burgers

With a little patience, peel the lupins one by one, then, if they are very salty, leave them to soak in fresh water for about ten minutes.

Meanwhile, boil the potatoes for 30-40 minutes, then peel them and put them in a blender with the lupins, onion, basil and salt and pepper to taste.

Blend everything until you get a fairly homogeneous mixture, then shape the burgers with an 8 cm pastry cutter.

Add the chia seeds to a few tablespoons of corn flour (I forgot, in fact I added them later, during cooking) and bread the burgers.

Heat a little oil in a thick-bottomed non-stick pan and cook the burgers for 3-4 minutes per side.

Your lupine burgers are ready.
