Baked rice is a single dish that is very simple to make, good and tasty and that is appealing to young and old thanks to its heart of stringy mozzarella. It is a recipe that my mother often prepared with leftover Sunday sauce or to recycle boiled rice, but I made it ad hoc following all the trappings. To make the baked rice even tastier and serve it as a Sunday dish, you can season it with a meat sauce and add small meatballs. How to make baked rice
Brown a clove of garlic in a pan with the oil.
Add the tomato, salt and basil and cook with the lid on for about 10 minutes. Stir from time to time.
When the sauce is ready, add the rice and mix.
Now pour half the broth, cover with a lid and simmer for 10 minutes, stirring occasionally.
Continue to cook adding the broth a little at a time as it is absorbed.
When cooked, put the butter and 3/4 of the Parmesan cheese and stir everything.
Now pour half the quantity of rice into a buttered baking dish and add the mozzarella slices.
Cover with the remaining rice and cover with the remaining Parmesan.
Grill for 10 minutes or until the surface is golden brown.
Your baked rice is ready to serve.
