Strawberry Puff Recipe by of 06-13-2020

There strawberry puff it is practically the sweet version of my salty spiral pie from some time ago (this time I used a slightly different composition method that if you want you can also experiment with the savory version). It is a simple puff pastry, with fruit and cane sugar (I used strawberries, but you can change and opt for other types of fruit: a classic and sure-success combination could be for example apples and cinnamon), in which the ingredients are cut into thin slices, inserted into strips of strips and arranged in a spiral.
Despite the very few ingredients, the final effect is quite spectacular, as it is a nice dessert with concentric centers. I have decorated only with powdered sugar, but you can add fresh mint leaves, decorations made with molds and leftovers of puff pastry, or whatever

Method

How to make strawberry pastry

First, wash the strawberries, dry them, clean them by removing the stalk with the leaves, then cut them into thin slices.

Roll out the puff pastry and make 3 strips (cutting horizontally starting from the shortest top).
On each rectangle of pastry, arrange along one of the edges a row of sliced ​​strawberries without spacing them and trying to occupy only half of the strip, then sprinkle with sugar and almonds.
Then close the free half of the pastry over the strawberries, as shown in the figure.

Continue like this with all the other strips of pastry: stuffed with strawberries, sugar and almonds, then close.

At this point, start composing your cake: take one of the strips of stuffed pastry and roll it up on itself in a spiral.
Arrange it in the center of the mold (lined with parchment paper), then continue to wrap the strips on top of each other, as if they were a single, long strip of stuffed pastry that rolls up on itself.
Once you have finished wrapping all the strips, brush with milk and cook for about 30 minutes in a preheated convection oven at 200 ° C.

The strawberry sheet is ready, let it cool, then decorate with icing sugar and serve.
