The preparation of glass biscuits or mirror biscuits has always fascinated me. I'm not 100% operational yet so I don't know if I'll be able to reply to your messages, but I couldn't leave you without a new prescription. Kisses to all and good preparation of glass cookies.
These cookies are ideal to prepare during the holiday season and give them away or use them as Christmas decorations.
How to make glass cookies
In a bowl, arrange the flour with the sugar in the center, the butter in chunks, the vanilla, the yeast and the yolk. Work the shortcrust pastry until you get a soft dough. Wrap the shortcrust pastry in plastic wrap and place in the fridge to rest for 30 minutes.
Roll out a 3mm thick sheet on a floured surface.
Cut out the cookies using molds of 2 different sizes. First place the larger ones on the dough and press the smaller mold on them.
Transfer the biscuits to a baking sheet lined with greaseproof paper.
Finely chop the candies and distribute them in the center of the cookies.
Bake the cookies in glass at 180 ° and bake for 10 minutes.
Then remove the glass biscuits from the oven and allow them to cool completely before removing them from the plate and serving.
