The frico is a dish made from potatoes and onions, enriched with delicious Montasio cheese. Its appearance is similar to an omelette with a crispy crust on the outside and a soft heart inside, with a truly unique taste. The dish traditionally was created to recover some cheese scraps, which were left over after the shaping of the forms, today instead the frico it is generally prepared in holidays, and is then generally accompanied by polenta. Last thing, before leaving the recipe, if you do not find Montasio cheese, you can replace it with another cheese as long as it is hard.
How to make the Frico
Boil the potatoes in water for about 40 minutes and then peel them and mash them in a potato masher.
Slice the onion thinly and stew it in a pan with a little oil and water.
Then add the potatoes and mix them.
Now cut the cheese into small pieces and put it in the pan as well.
Season with salt and pepper.
Melt the cheese and compact the frico directly in the pan.
Continue cooking over high heat and turn the frico as soon as a pleasant crust forms.
Your Frico is ready to be served.
